These Strawberry cheesecake brownies have a rich, fudgy brownie base topped with a creamy, strawberry-infused cheesecake swirl. It’s perfect for parties, gatherings, or a sweet treat anytime!
5ouncessemisweet or bittersweet chocolatecoarsely chopped
½cupunsalted buttercut into pieces
2tablespoonsunsweetened cocoa powderregular unsweetened or Dutch-processed
1cupgranulated white sugar
1teaspoonpure vanilla extract
3large eggsat room temperature
¾cupall-purpose flour
¼teaspoonsalt
For the Strawberry Cheesecake Swirl:
1cupcream cheesesoftened
⅓cupgranulated sugar
1large eggat room temperature
1teaspoonpure vanilla extract
¼cupprepared strawberry jam
For the Strawberry Jam:
1cupstrawberrieschopped
¼cupgranulated white sugar
1teaspoonlemon juice
Instructions
Prepare the Strawberry Swirl:
In a small saucepan, combine strawberries, sugar, and lemon juice.
Cook over medium heat, stirring, until the strawberries break down and the sauce thickens (about 5 minutes).
Remove from heat and let it cool while you prepare the other layers.
Make the Cheesecake Batter:
In a bowl, beat softened cream cheese with sugar until smooth.
Add egg, strawberry jam and vanilla extract, mixing until the mixture is lump free and fully combined.
Make the Brownie Batter:
Preheat your oven to 350 degrees F (180 degrees C). Line the bottom and sides of an 8 inch (20 cm) square baking pan with parchment paper.
Melt the chocolate and butter in a large heatproof bowl, placed over a saucepan of simmering water or in a microwave in 30 second intervals.Set aside to cool slightly.
In the bowl of your mixer beat the eggs and both sugars at high speed for 4-5 mins until tripled in volume and the sugars are completely dissolved.
Slowly beat in the the melted chocolate mixture and vanilla extract to the whipped eggs and sugar.
With the mixer on low stir in the flour, cocoa powder and salt until until no dry spots remain, making sure not to over mix the batter
Pour the brownie batter into the prepared pan and spread evenly using the back of a spoon.
Add the Strawberry Swirl:
Spread the prepared cheesecake filling over the brownie batter
Spoon the cooled strawberry sauce over the cheesecake layer.
Use a knife or toothpick to gently swirl the sauce into the cheesecake layer.
Bake & Cool:
Bake for 35-40 minutes or until the center is set and a toothpick inserted into the center comes out clean with a few moist crumbs.
Let the brownies cool completely in the pan before slicing. For best results, refrigerate for a couple of hours before cutting.
Notes
You can use your favorite store bought strawberry jam in case you don't to make fresh.Serving Suggestion: Serve with a dollop of whipped cream or a scoop of vanilla ice cream for an indulgent dessert.Make it extra fruity: Add a few drops of strawberry extract to the cheesecake mixture or more chopped strawberries.For best results, refrigerate for a couple of hours before cutting.Chilling would allow you get cleaner slices
