Blueberry Blondies with White Chocolate

These Blueberry Blondies are thick, chewy, and bursting with juicy blueberry flavor. Made with a rich brown sugar blondie base, they’re studded with fresh blueberries and swirled with blueberry jam for an extra fruity punch. Finished with a creamy white chocolate drizzle, these easy bars come together in under 30 minutes—no mixer needed!

Equipment

  • 8 inch square pan

Ingredients
  

  • ½ cup unsalted butter
  • ¾ cup packed light brown sugar
  • 1 large egg plus 1 egg yolk
  • 1 teaspoon pure vanilla extract
  • 1 cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup fresh blueberries
  • cup blueberry jam Optional
  • ¼ cup white chocolate chips

Instructions
 

  • Preheat oven to 350 F/180C and butter and line with parchment an 8 inch square baking pan.
  • In a small saucepan, melt the butter. Remove from heat and let cool to room temperature.
  • In a bowl, whisk together the flour, salt and baking soda.
  • In a large bowl, whisk together the brown sugar and warm melted butter until it cools and comes together well (2-3 minutes). Mix in the egg, egg yolk and vanilla extract
  • Gently fold in the blueberries into the blondie batter making sure not to overmix.
  • Pour the batter into the prepared pan, smooth the top.Spoon a few dollops of the blueberry jam and swirl carefully using a knife or skewer.
  • Bake for about 25-30 mins, or until the top of the bars are dry, golden brown, and a toothpick inserted in the center comes out with a few moist crumbs.
  • Remove from oven and place on a wire rack.
  • While the blondies are cooling melt the white chocolate in microwave in 30 second intervals.Drizzle the melted white chocolate over the blondies.
  • Once the white chocolate drizzle has set cut the blondies into pieces.

Notes

  • Don’t Overmix the blueberries: Overmixing can lead to blueberries bleeding into the batter and turning it blue.
  • Add white chocolate: If you love white chocolate you can ½ cup of white chocolate chips or chunks into the batter along with the blueberries.
